Minimum Requirements:

High school diploma or its equivalent AND three (3) years food service experience in Contract Dining, Catering, Hospital, Skilled Nursing Facility, or other large scale food service facility to include one (1) year of supervisory experience. Current ANSI-Accredited Certified Food Protection Manager certificate required. An equivalent combination of training, education and experience may be substituted.

Position Summary:

Reporting to the Food Service Manager, this position is responsible for supervising the day-to-day operations of the Food Service Contract, Commissary Contract, Pest Control and Waste Management for the Allegheny County Jail (ACJ). The Food Service Supervisor ensures vendor compliance with specified contracts to ensure 24/7 oversight of meal preparation and the cleanliness of the facility. This position is shift work with start times ranging from 4a – 8a, 10a – 12p, or 6p – 8p. The work is performed independently and in accordance with applicable Federal, State, and Local standards, guidelines, and regulations that govern employers.



Overview:


Duties:

  • Supervises contracted vendor and incarcerated population engaged in the preparation, cooking, and baking of food for residents and staff at the ACJ.
  • Ensures third-party vendor has staff assigned to specific tasks and assures that tasks are completed in accordance with food service procedures to meet established production schedules.
  • Ensures that meals are prepared in accordance with standardized recipes from pre-approved menus and held at safe temperatures; inspects special diet trays to assure that the correct diet is served.
  • Orients new staff to operations and conducts performance evaluations; provides written reports to ACJ Admin and third-party vendor as necessary in accordance with ACJ system policies and procedures on performance and contract compliance.
  • Assists the Food Service Manager in implementing and interpreting department policies and procedures for third-party vendor and contract compliance.
  • Ensures all safety regulations and precautions are followed by vendors and food prep line staff and investigates and reports all accidents/incidents as required.
  • Reviews and maintains Hazard Analysis Critical Control Point (HACCP) logs and makes procedural corrections to maintain real-time compliance.
  • Ensures that food service personnel follow established sanitation and waste management policies and procedures.
  • Ensures that containers of chemicals, cleaning agents, etc., are properly labeled and stored and that the required Safety Data Sheets (SDSs) are properly affixed and filed.
  • Reviews and investigates complaints and grievances and provides recommendations for action to the Food Service Manager.
  • Performs other related duties as required or requested.
